Knedliky (Czech Bread Dumplings)
This bread is one of the main pillars of the Czech cuisine. Is a recipe made out of stale bread and boiled, but steaming also works nicely.
Ingredients
- All-purpose flour (480 g)
- Warm milk (300 mL)
- Stale bread — Chopped in small cubes.
- Egg (1 medium)
- Yeast (6 g)
- Sugar (1 tsb)
Steps
- Combine in a bowl the milk, sugar and yeast. Let it sit for
10 minutes. - Add the whisked egg, salt, the bread cubes and the flour into the mix. Integrate everything well until it forms a dough.
- Knead the dough for
3~5 minutes until it becomes slightly more elastic. - Transfer it into an oiled bowl and let it ferment for
2 hours or until it doubles size. - Separate the dough into small chapata-size pieces or German Brötchen. Let them sit for
10 minutes before cooking. - Cook the bread either by boiling for
10 minutes on each side or by steaming for
20 minutes. - Chop the cooked dough in slices and serve.
