Gnocchi

Gnocchi are a great type of pasta made out of potato or sweet potato.


Ingredients

  • Potato or Sweetpotato (550 g)
  • Flour (200 g)
  • Salt

Steps

  1. Boil the potatoes until they are soft. The original recipe calls to not peel them beforehand for a better starch control, but you do you.
  2. Mash them and mix them with the flour until a homogeneous dough is formed. Let it rest for 🕰️ 10~15 minutes.
  3. Divide the dough into smaller parts, then stretch each part into a fat string (as fat as a finger).
  4. Chop the string into "small pillows". You can leave them like this or shape them with a fork.
