Gnocchi
Gnocchi are a great type of pasta made out of potato or sweet potato.
Ingredients
- Potato or Sweetpotato (550 g)
- Flour (200 g)
- Salt
Steps
- Boil the potatoes until they are soft. The original recipe calls to not peel them beforehand for a better starch control, but you do you.
- Mash them and mix them with the flour until a homogeneous dough is formed. Let it rest for
10~15 minutes. - Divide the dough into smaller parts, then stretch each part into a fat string (as fat as a finger).
- Chop the string into "small pillows". You can leave them like this or shape them with a fork.
