Frijoles (paste)

A delicious frijoles paste, perfect to use either with nachos, fajitas or tacos. This recipe is prepared for anyone to be able to cook it with ingredients available at any country.


Ingredients

  • 1 can of black frijoles (400 g) - or any desired bean
  • Chicken broth
  • 1 onion
  • Lard (optional)
  • Spices for seasoning

Veg. alternative

  • Vegetable broth instead of chicken broth
  • Aromatic fat instead of lard, for example use mustard oil

Steps

  1. Open the canned beans and put them in a food processor (without the liquid of inside the can). Add also the chicken broth until all the beans are barely covered. If the broth is powder, add water with the same proportion.

  2. Process (or blend) all the beans until a paste is created. The final process is more enjoyable if it is still a little bit ckunky.

  3. Chop the onion in small pieces and fry it with some oil at medium heat. Be patient and let it brown.

  4. Once the onion is ready, add the lard or any aromatic fat (which will give a lot of flavor) and the paste of frijoles once the lard has melted. Add also all the spices to taste: salt, cumin, coriander, etc. Let it all cook for about 10 minutes, stirring from time to time.
