Spanish Egg Flan
The 'flan' is actually translated as 'pudding' in English, however not all puddings are real flans. This is the traditional recipe, which could be cooked in the over or even in a cookpot.
Ingredients (4 small portions)
For the caramel:
- Sugar (1 part) — Use a glass of 200 mL.
- Water (1/2 part)
For the flan:
- Milk (250 mL)
- Sugar (100 g)
- Eggs (2 medium)
- Lemon peel
- Cinnamon stick
Hint
To make a coffee flan substitute part of the milk volume with coffee.
Steps
- Put the milk at medium heat with the lemon peel and the cinnamon stick. When it is about to boil, put it away from the heat and let it cool down for around
30 minutes. - Mix the eggs and the sugar. Once they are incorporated, mix them with the milk.
- Remove the lemon peel and the cinnamon from the milk, then pass it through a sieve.
- Make the caramel by cooking the sugar and water together at medium-low heat, always stirring.
- Pour the caramel at the final containers for the flan, then put the flan mix on top. Cover the top of the containers with aluminum foil.
- Cook the flan in bain-marie either in the oven at 180 °C or in the stove for
30 minutes. - Let it rest in the fridge for at least
4 hours.
